You will want to set up the TZ WAN Global setup to drop you into the network, not a particular IP (host->network).
I use VPNTracker from Equinux on the laptop macs to connect back, because it's quick, and supports many advanced features of the TZ that the built-in VPN software on a Mac client does not. I use TZ200's for site-to-site and global VPNs for my clients because of the need to have Bonjour support between sites. The tech support crew are very helpful of walking you through the nuances. There are instruction sets through the knowledgebase side of SonicWALL that can assist you in setting up the VPN side, if you need more than the defaults. The VPN support in the TZ210 is going to be faster, and more hardened, than anything you will be able to get from the server.
